Wood pigeon fillets

INGREDIENTS:
- Wood pigeon fillets (number to be determined based on the number of guests)
- Onions
- Country ham or bacon lardons
- 3 tablespoons honey
- 5 tablespoons velvety balsamic vinegar
- Salt and pepper
- Olive oil
- Butter
- 1 tablespoon lemon juice
RECIPE:
Sear the wood pigeon fillets (skin side down) in a frying pan with a knob of butter and a drizzle of olive oil, then remove from the heat and set aside.
Fry the onions until golden brown, then add the pieces of country ham or bacon.
Add the wood pigeon fillets to the garnish over a medium heat.
At the same time, add the lemon, vinegar and honey to a saucepan. Mix well over a low heat to obtain a slightly thick sauce.
Pour the sauce over the wood pigeon fillets over a low heat and simmer for 3 minutes.
Serve hot, accompanied by a good wine and a few slices of bread.
